Basic White Bread From a Bread Machine
The basic ingredients are the same for most white breads, which includes flour, water, sugar, salt, some type of fat, and yeast. The amount of each ingredient is important to the quality of the bread, just as the recipe calls for.
Flour and water are typically used in a 3:1 ratio. For example, three cups of flour and about one cup of water make up the major ingredients of a large loaf of white bread. Flour should be bread flour, a kind of flour that has had no leavening agents added to it. All purpose flour is more suited to baking cakes and the like, not for making bread. Of course, be sure to store your flours in a cool, dry place. Water should be cool, tap water. If it's hot, refrigerated water should be used. Adding water that's too warm will cause the yeast to act too quickly, which in turn may affect the rising of the bread.
Sugar and salt are added in teaspoon quantities, but they're important for producing a nice loaf of bread. Sugar imparts a taste to the bread, makes the crust a darker color, and helps to keep the bread soft. Honey or molasses can be substituted for sugar in equal quantities. Salt helps to make the dough firm and keeps it from rising too high.
Fats are added to bread to add flavor and to keep the bread from getting hard. Although margarines are popular substitutes for butter, butter is your best bet for flavor, especially when using a bread machine. Only a small amount is used, perhaps one tablespoon of butter for a 1 ½ pound loaf of bread.
Yeast, the final yet most important ingredient in making bread, is added to the dough last. Only rapid rise yeast or active dry yeast can be used successfully. Yeast should be stored in a cool, dry place and used before its sell-by date. If a jar of yeast has been opened and stored in the refrigerator, bring it to room temperature before measuring out.
Other ingredients may be called for in a basic white bread recipe, such as milk or eggs. Milk, either dried or fresh, may be added to enhance flavor and to give the bread a shine.
Eggs can be added to improve on the flavor and aroma of the bread. Eggs will also make a softer textured loaf. Substitute one egg for 1/8 cup of liquid called for in the recipe.

Making Bread in a Bread Machine: Some Common Questions
If you've never used a bread maker you may have a few questions about making bread in a bread machine. Some common questions include: Is it hard to use? What's with all the settings and choices? Is it hard to use?
Making bread in a bread machine is relatively easy once you get the hang of it. It really consists of measuring and placing the ingredients in the baking pan, setting the desired baking mode, removing the baking pad, and removing the bread.
One of the benefits of owning a bread machine is its ease of use. It takes away all the hard work of actually making bread from scratch leaving you more time to actually enjoy it.
What's with all the settings and choices?
Depending on the bread machine you might have a few settings or a great deal of them. These settings allow for the different types of bread to be made. You can also set timers to delay baking so you can have a loaf ready for you at a specific time.
Most models are able to do a variety of bread types; just about all of them allow you to make dough; some can do jam and the Zojirushi BB-CEC20 can even bake meatloaf.
What ingredients will I need?
Although many options are available for making bread in a bread machine there's some basic ingredients you're going to keep using. Ingredients like:

If you're making gluten free bread then you would not use gluten and the recipe will be slightly different. Many other ingredients, such as fruits, grains and nuts can be used but this all depends on the recipe.

If you read the manuals that come with a bread machine they will tell you to follow the recipe exactly as stated. The same goes for bread making recipe books. This makes sense if you're concerned about consistency and reliability in your baking.
Once people become more experienced however many of them began to try variations on the measurements. Be cautious if you plan on doing this as you're bound to have some failures in the beginning. Just keep this in mind and you can have a lot of fun being creative.

As you can see making bread in a bread machine is easy and the settings are designed to give you access to different bread, dough, and additional food options. Some basic ingredients are always used but you can also add fruits, nuts, and grains depending on the recipe. 1. American Garlic & Parsley Bread - Machine
Amount Measure Ingredient: Preparation Method
- 1/2 teaspoons Active dry yeast
- cups Bread flour
- tablespoons Wheat germ
- tablespoons Wheat bran
- 3/4 teaspoons Salt
- tablespoons Sugar
- tablespoons Vegetable oil
- Garlic cloves -- minced
- tablespoons Chopped fresh parsley
- 1/4 cups Water
Directions:
- Add all ingredients in the order suggested by your bread machine manual and process on the basic bread cycle according to the manufacturer's directions. Use White bread setting.
- Let the loaf cool before slicing. Serve plain or toasted.

- 2 teaspoons Yeast
- 3 teaspoons Vital wheat gluten
-----1 LB LOAF-----
- 6 ounces WATER
- 2 1/2 tablespoons Olive oil
- 2 tablespoons Sugar
- 1/2 teaspoon Salt
- 2 cups flour + 2 T
- 1 teaspoon Yeast
- 2 teaspoons Vital wheat gluten
Direction:
- Place ingredients into BM pan according to your machine's directions.
- Bake on regular cycle. light setting.
3. Anadama Bread
Amount Measure Ingredient - Preparation Method
-----FOR 1-1/2 LB. LOAF-----
- 1 package Yeast
- 3 1/2 cups Bread flour
- 1/3 cup Yellow cornmeal
- 1 1/2 cups Boiling water
- 1/3 cup Molasses
- 1 teaspoon Salt
- 2 teaspoons Butter
Directions:
- Place cornmeal into a bowl.
- Carefully pour boiling water into cornmeal, stirring to make sure it is smooth.
- Let stand for about 30 minutes.
- Stir in molasses, salt and butter.
- Place yeast into the B/M pan, bread flour, then cornmeal mixture.
- Select white bread and push start.
4. Apple Carrot Bread
Amount Measure Ingredient - Preparation Method
- 1 1/8 cups Apple juice
- 1/3 cup Carrots -- grated
- 1 1/2 Eggs
- 2 1/3 tablespoons Maple syrup -=OR=- honey
- 1/2 teaspoon Salt
- 1/3 teaspoon Cinnamon
- 1 1/2 tablespoons Vital gluten -- to 3 tbls
- 3/4 cup Oat -=OR=- wheat flakes
- 3 cups Whole wheat flour
- 2 teaspoons Yeast
- 1/3 cup dried apples
- 1/3 cup Nuts -- chopped (opt)
Directions:
- Add ingredients according to manufacturer's directions.
- Medium color setting. Add nuts and apples at the beep.
Makes 1-1/2 lb loaf.
